I’m obviously missing something, but… how do we set SMTP/ Gmail in 2.0/mobile app?

I don’t get what you want to achieve,
Homey self does not need an SMTP setting and does not email or read your mailbox.

Please be more specific in your question.

Synology has a card - mail a snapshot - that was working well previously. After the upgrade however it does not allow me to send a snapshot, because there are no SMTP setting to use to send it, I assume

Ok, Now we are getting somewhere,

The developer did not yet update the App in the App store but has it almost ready he says.
Please contact the developer, as I wont see threads here from him you could contact using te App store.
